Nanaimo Bars
Nanaimo Bars (pronounced na-nye-mo) are a very popular and tasty pastry. Though they are little known in the United States, they are very popular in Canada, particularly among the non-health conscious! They share the same name as Nanaimo, British Columbia, though their origin is not certain. What is certain is that these treats are as delicious as they are fattening. Enjoy!
Ingredients (given in non-Canadian imperial measurements!)
Base: 1/2 cup butter
1/4 cup sugar
5 Tbsp cocoa power
1 egg lightly beaten
1 tsp. vanilla
1 1/2 cups graham cracker crumbs
1 cup shredded coconut
1/2 cup chopped walnuts
Filling: 1/3 cup butter
3 Tbsp custard powder (Bird's Imported English Dessert Mix for Custard Style Pudding; or substitute vanilla pudding powder)
1/4 cup milk
3 cups icing sugar
Topping: 8 ounces semisweet chocolate
2 Tbsp butter
Procedure
Base: Melt butter in heavy saucepan. Stir in sugar and cocoa until smooth. Whisk egg with vanilla and stir into butter mixture. Remove from heat. Stir in graham cracker crumbs, coconut and nuts. Press evenly over bottom of greased 9" square pan. Chill until set: 20-30 minutes.
Filling: Beat butter with wooden spoon until light. Beat in custard powder and milk. Gradually beat in icing sugar. Spread over chilled base and let set in fridge.
Topping: Melt together chocolate and butter. Stir until smooth. Spread an even layer over chilled filling. Store in fridge until chocolate topping begins to harden. Cut into bars using a hot knife before chocolate becomes totally solid; wipe the knife clean between cuts.
They can be stored in fridge or freezer for up to 2 months.
