Too many tomatoes & Zukes this year-here's a tasty way to lessen your overload


2 tablespoons Vegetable oil
1 medium onion, sliced
1 cup chopped tomatoes, canned or FRESH
3/4 teaspoon salt
pepper-to taste
1 bay leaf
3 medium zucchini, cut into 1inch pieces

1)Heat the oil-add onion & saute until transparent. Add tomatoes, salt&pepper & bay leaf. Simmer 5 minutes
2)Add the zucchini to the sauce, cover & simmer until tender-about 8-10 minutes:D
