The full flavor of Portobello mushrooms goes well with
Arborio rice.
Serves 4
1 Tablespoon Olive oil
1 tablespoon Butter
1/4 cup Shallots, minced
1 cup Portobello mushrooms, diced
4 cups Chicken broth, warmed
1 cup Arborio rice
Heat the oil and butter in a heavy skillet over medium
heat. Add the shallots and mushrooms. Cook until soft
(about 4 minutes). Add the rice and cook for 3 minutes
longer. Slowly add the broth, one cup at a time, until the mixture is slightly creamy. Serve immediately.
